Usually get regular cheddar Tillamook Cheese, but ill put all the cheeses in if they are around.

All this "no anything except for cheese/fat/bread" talk sounds like saying "it's not a salad if you put anything other than lettuce and dressing in it." I'm not trying to say a cheeseburger is a grilled cheese sandwich; it seems like a matter of what the primary driving force of the experience is.

I've learned that using mayo instead of butter to fry the bread is AMAZINGr. Yes, I'm a sicko who loves mayo but it makes the sandwich so much more delicious.

I love mayo and would have never dreamed of trying it instead of butter. I love butter too, but I'm down to try it.

I think spreading mayo on the bread is a pretty good way to do it. I've still never made home made mayo and only have done with this prepared mayo.
Chopped onion and garlic and cheeze whiz or chopped garlic and cheddar...
If you use heavy stuff like sprouted grain bread or lots of fillings it helps to have a cover for the frying pan. Under most conditions it's good to have matching lids for your pots and pans, and you're a savage if you have em and don't use em.

I actually specialize in grilled cheese and the best was made using a bread no one's ever heard of. Roman Meal used to make a bread that was not quite white bread but definitely not whole wheat. This bread had a different heat threshold which would allow you to melt the creamiest, most delicious of grilled cheeses without burning the sandwich. And it combined that unique quality with the crispyness advantage that wheat has over white bread. I used to make it for friends. I wish everyone could have it, but I guess it's sadly joined other radical things of the past, like the t-rex and computer games without DLC.

I think I've determined, after more delicious experimenting, that I prefer a blander bread that allows me to enjoy more of the cheese flavor.

Mayo is incredible.
Also yeah packaged white bread loses out to texture, not so much flavor, though the flavor is one dimensional, it's definitely there, and honestly a relatively :"boring" bread like that has a great set of uses, only real problem is that it's not a substantial source of anything other than diabetes and feels like you've eaten nothing at all when you just put 300 calories in your body.
