It's not something I'd order again, ever, but I'm definitely glad to have tried it!

i feel the exact same way concerning this beer.
that shit was so thick!!!!
i still want to try a sam adams utopias one day.
strongest beer in the world sounds way too temping :rolleyes:

Oh Fred, come to Boston dammit, we'll go have a snifter of the Utopias...or we can buy a 24 oz bottle for $125...25% alcohol, that's something alright

I bottled the apple cider today...I got about 45 or so bottles. I tried a little and it's a bit too sour for my taste, so hopefully that'll mellow out a bit. I'll post which apples I used when Iget back home.

Man, I wish I was coming to PHX this new years but plans fell through, unfortunately. I'll definitely go in on a bottle with you, Fred, I need to fly out there badly, it's been too long!

Christine, her mom Nancy and I brewed a pumpkin ale this weekend. We used 11 pounds of pie pumpkins we bought from a produce stand across the street from our place. Here's a link to the google cache of the recipe we used. Anyway, you might notice it has 3 pounds of grains steeping along with the 11 pounds of roasted, cubed pumpkin (We didn't puree the pumpkin like the recipe calls for because we didn't want a repeat of our canned pumkin ale fiasco last year) which made for a very very full brewpot.

The recipe doesn't specify a yeast to use, so we went with the brew shop guy's recommendation of a belgian wit yeast. Straight out of the package the belgian wit smells spicy like a La Fin Du Monde or similar beer. We didn't add any additional spices yet because we want to see what the yeast does on its own. Also, notice it calls for seven pounds of DME, which should make the beer strong enough to kick the ass of even the most seasoned drinker.

The yeast went in Saturday night, and as of this morning, Tuesday, it's still fermenting away like mad with a good 3"-4" head on top of it. Normally they've died down a little by now but this one is still going strong.

Goclin has a FIN TDU MONDE GFing on..ungfor5unately, mine takes 6 meoths to age.. so i'll bea fuckign old man

The pupkin ale we did is going in the bottle tonight. The color is great, and it was foamy in primary fermentation for about six days. That could be the belgian wit beer yeast.

Sherv, I can't believe you did a trippel... you gotta fill us in on the details.

Sherv, I can't believe you did a trippel... you gotta fill us in on the details.

Well, the carboy's at Colin's place, so I can't provide much in terms of updates...brewing was cool though, I had to caramelize 4 cups of the wort, which was basically lettuing it boil down until it became syrupy. It did boil over and spill, and his cat Tony seemed to enjoy licking it up.

Man, I can't wait to hear more about the pumpkin beers! Mig, any flavor development?

I want my next brew to be some ale with a 12.5% alc content...it looks positively dangerous, but if I do all-grain on it it'll require 13 POUNDS of grain. THat's enormous, I don't even have a bucket large enough for it!
