why doesn't the thief just do the right thing and run them over

Because it de-values the bike. I think this is obvious.

value of a fixed gear bike < value of a dead fixed gear rider

so then why is he stealing the bikes? wouldn't it make more sense to shoot the hipster, steal the corpse, and leave the bike?

Emperors of Japan
Myspace

My thesis is called the "Black-Emperor-Says Theory" and holds that any any Phoenix-area indie rock festival there is a 100 percent probability that Emperors of Japan, Black Carl, and/or What Laura Says will be on the bill.

Just to be safe, onesie riders should put their gears back on. Sounds like the thief isn't looking for real bikes.

kinda like that dude who plays for the jacksonville jaguars who was spending some time with this 19yr old cheerleader for the team. 19yr old chick's former boyfriend shows up at her house and starts waving a pistol around. the girl gets away and goes and grabs her gun from another room. ex boyfriend and her have a shootout in the house while the jags football player barricades a door to a room he's hiding in then jumps out of the second story window, runs to a neighbor's and calls the cops. the cops pick up the ex boyfriend at his own house an hour later after fleeing the scene (not having shot anyone).

no one got hurt = funny shit.

Nah, I like not fucking with gears, plus I live in the desert for a reason...there aint school books in my Camelback. Though my road bike is worth much more than my single speed daily driver so I pray the kid doesnt get wise...
