let's get one thing straight: i know a good burger. you can tell by looking at my waistline. but more importantly, i can tell you why a burger is good or why, despite the best efforts of the cook, it is not. and based on my 30+ years of burger experience, i can tell you that the burgers at kuma's corner in chicago are awesome. no, that's not strong enough of a word. awesome plus?
first off, from looking at the website you might get a little intimidated. this is not a fancy establishment. in fact, from the website it looks downright surly. the burgers are all named after heavy metal bands, and there is a "must have a tattoo" policy for employment (i'm not making that up, by the way). so when i get there and i'm told there will be a 90 - 120 minute wait, my first reaction is to turn around and go eat elsewhere. but then i remembered that i made a mental note to eat at kuma's corner about 2 years ago when i saw it profiled on the food network, and i don't get to chicago all that often, so if not now, when? the "hostess" (i put it in quotes, because she's not behind a podium like at most restaurants, but hanging out in front on the corner with everyone - you wouldn't know she was in charge of the waiting list unless you saw somebody else in the know talking to her - which we did) was kind enough to inform us that it was first come first serve at the bar, and if you can find a spot you can eat there. oh, i can find a spot.
20 minutes later we're sitting down, drinking IPA's, and evaluating the menu. i order the "Lair of the Minotaur" (Caramelized Onions, Pancetta, Brie, Bourbon Soaked Pears). Chris, my co-pilot on this adventure, orders the "Famous Kuma Burger" (Bacon, Cheddar, Fried Egg). it's worth mentioning that i was completely torn on what to order. i almost went with the "Mastodon" (BBQ Sauce, Cheddar, Bacon, Frizzled Onions) or the "Judas Priest" (Bacon, Bleu Cheese Dressing with Apples, Walnuts, and dried cranberries). seriously, they all looked good, but i decided on the minotaur because i'd never had a burger with a pear on it, so there.
all burgers are served on a pretzel bun. not some regular bun, not some fancy brioche, but a pretzel bun. i can't emphasize enough how important this is to the overall flavor of the burger. it's indescribable. you can't just say "it's kind of pretzel-y", because that doesn't cut it. it's sort of sweet, buttery, salty, and chewy. nice texture. if i can find these somewhere in phoenix, i'll buy them. if not, i'm going to learn how to make them.
the meat itself is incredibly juicy. but that's fine, because the pretzel bun is sturdy enough to catch that juice and not get all soggy. i don't know what exactly they're putting in the meat, but it's awesome. i feel like the carmelized onions and pears might be overkill, because the onions are kind of sweet to begin with, but the pears are over the top sweet and that's a great combo with the pancetta and brie. the burger, which was 10 ounces, is gone in about 5 minutes.
chris is impressed with his as well, but he points out that the fried egg is probably not necessary. he forgot it was there until he got to the yolk. still delicious, however.
they serve all burgers with a side of waffle fries, and a ketchup/salsa mixture. they're great, but you're putting them next to one of the best burgers on the planet. they're going to look meager. i'm not complaining, just putting things in perspective.
bonus points to kumas for cooking the burgers properly. when i say "medium", i want my burger cooked medium. i don't want a solid gray hockey puck of a burger (i'm looking at you, chilis - you f*cking suck and you know it - stop advertising like you know a goddamn thing about burgers). also, extra bonus points for being incredibly cool despite the fact that it's mobbed on a monday night, and for having a fantastic beer selection. no miller/bud, just a ton of microbrews. oh, and whiskey on tap. yes. on tap. if you're trying to find a phoenix equivalent, try to imagine if rosy mccaffery's was 1/3 as big, twice as crowded, hotter, and instead of playing crappy irish cover music, they had nothing but slayer on their jukebox, and they're serving the kind of burgers that deluxe thinks they make, but they don't.
bottom line: this was one of the five best burgers i've eaten in my life, easily. if you're within 100 miles of chicago, go there.

yeah that place was on Diners, Drive-ins and Dives. Looked amazing. I don't eat meat so I live vicariously through cooking shows.

this was another diners, drive-ins, and dives place that exists down in phoenix at 40th street and indian school and (in my opinion anyways) takes matt's big breakfast out behind the woodshed and shows it who's boss. anyway, they're opening another one at the scottsdale ice den (93rd street and bell) next week and i got to sneak in early and sample some goodness. they've got a big patio, so you can have breakfast outside - in 4 weeks this will be BALLER.
the same guy (aaron may) is also opening a bar and grill in the same location called 18 degrees, and it's set up sort of like the ice house tavern is where you can sit and drink and watch the ice skaters, but they've got a full kitchen and a pretty decent menu in there as well. and as an added bonus, rocquero is installing all the TV's in there. WTF?
anyway, north scottsdale represent. let's have breakfast over there sometime, shall we?

The portion sizes are freaking ridiculous. My manager got the ham and eggs, Belgian waffle. When I saw her ham slice I told her Merry Christmas because it could feed a family for the holiday. The potatoes (hash browns) and omelets (6 eggs!) were the portion size equivalent to a baby. I asked for my one egg, dry English muffin and cottage cheese. The cottage cheese portion size... I took home and had cottage cheese for breakfast for four days. Yeah. HUGE. It was kind of a neat place though.
side bar: I'm looking forward to my FLV (facon, lettuce, vegenaise) sammich today. I love facon.
