last night i decided to get all uppity with my hamburger.

1/2 pound burger (medium rare)
spicy BBQ sauce (applied before grilling)
2 strips of hickory bacon
smoked cheddar cheese
grilled onions
more spicy BBQ sauce
toasted bun

i'll put that up against steak n shake AND in n out burger any day.

hmm mmmm that sounds good! I like to mix feta cheese and a little cayenne into my burgers before grilling.

tonight i am getting ALLLL ambitious with dinner! I am making poblano peppers stuffed with chicken, breaded and fried, and smothered with a spicy cream cheese/goat cheese sauce. I am hoping to replicate the chicken poblano at Macayos.

Poblano update: Holy frak was that a lot of work! It was delicious, but definitely a one time only deal. The breading on the poblano was more fluffy like a chili relleno, and less crunchy like the Chicken Poblano at Macayo's. Of course, these were pan fried and not deep fried. I would give them a 8.5 out of 10 for deliciousness, and a -1,000 out of 10 for difficulty. The homemade Baja sauce was super easy and very delicious. Basically cream cheese, goat cheese and sour cream mixed with a puree of jalapeno, red pepper, and onion, cooked for like 10 mins. YUM!

Chicken drumsticks (salt, pepper, dash of Old Bay), corn on the cob and potato slices all cooked over some charcoal. God, I love the warm weather.

I finally found the perfect brownie recipe. Super chocolately, chewy without being slimy, moist, delicious. yay!! I ate the whole pan. (i took me like 3 days though.)

There's a super amazing breakfast place we ate at this weekend. Up in Scottsdale, there is a place called JP Pancakes (don't worry, it's not very Scottsdale - attitude-wise). They had amazing blueberry pancakes and super amazing oven baked pancakes. They have this Apple cinnamon oven baked pancake that comes out of the oven like 3-4 inches thick and shrinks down flat in front of your eyes. It was amazing!!! You gotta check it out! YUM!
