I'm only free on Saturday, but don't let that hold you guys back if Sunday's a better day.

Well, I'll need to borrow your 5 gallon kettle and one of your carboys, of course...

One of Sherv's carboys is still here. You should be straight if you get a kettle. Didn't you bring one from your place last time?

We did an orange hefe, but it didn't turn out that well.

And the weddings are over, fuckers.

I have another east coast wedding to go to in September.

For ours we did a regular hefe, except instead of using finishing hops, we used 1 1/2 oz of dried orange peel from the brew shop. You could barely taste the orange, and the lack of finishing hops made it sort of bland overall. If someone makes a mandarin extract, that sounds like a good idea.

I meant to mention this earlier.

My citrus wheat is just a wheat now. As it aged, the flavor got less and less. The fresh orange and lemon ingredients added for taste are gone completely. The orange/acid flavor went from overpowering, to delicious, to nonexistent. Selah. Extract flavors are probably the way to go to keep that taste around.

Maybe something like this.

Perhaps I will try it. I'l scroll through the Clone Brews book first and see if there's anything that catches my eye. I like to start simple when I'm new to things.

Words. I have a Newcastle clone bubbling up nicely in the closet right now. I wanted to try something that I could match to a real beer to compare/contrast with (as well as make a beer that my wife will like that isn't the red ale). While my beers have all been drinkable and tasty, I want to check accuracy as well. Yesterday I added the wort to ice water in an effort to cool it as quick as possible and it worked really well. Don't know how to make that work once I get a carboy though. The ice doesn't exactly fit through the top.

While brewing yesterday, I tried the Chipolte Ale from Rogue, as well as an Allagash White with Spices. The Chipolte was pretty tasty, but if I drank more than 2, I'd probably puke. The Allagash White was as advertised: really spicy. It basically tastes exactly the way hops smell when you add them to wort. Not bad, but again, a little bit rich to drink a lot of.

My second brew is fermenting at Dr Shumway's house. I picked a Belgian beer out of the clone brews book basically because I could find all the stuff at the homebrew shop. It's a Double Enghiem (?) Blonde, 7.5% alcohol. I hope it's good. I couldn't find any at the beer store despite an extensive selection of Belgian beers.

I used Sherv's 5 gallon carboy again (thanks z0r). Nick and I improvised a blow-off tube using his siphoning hose and the carboy stopper. Apparently it's working out ok. I do really want to try a secondary fermentation on this one though, especially since the Styrian Goldings hops they has at the homebrew store were only 1.3% and the recipe called for 9 HBU. In other words, after the aroma hops there's over 7 oz of hops floating around in the wort. Nasty.

The IPA carbonated with the drops. Tim to crack open the rest of the batch. Also, I need some time to do a brew soon. Anybody got any they can spare?

i have a lot of time, but no homebrewing equipment.

Colin's brew is so action packed, it should have it's own trailer.

I had to empty out the blowoff pot this morning after only a day. Thank god we did the blow off this time so I don't have to mop up every 10 minutes and end up with a towel that smells like week-old cat shit. The amount of hops at the bottom is astounding. Just under two inches deep. The brew is so active, that there is a constant swirl of sediment moving through the whole thing. Totally reminds me of when I would tape two coke bottles together and make a tornado.

I tried an Ommegang last night at the bar and I found it to be quite tasty. I didn't even mind that it cost as much as my veggie sandwich ($9.00) I actually think that Colin's clone is closer to that then a Chimay, which is a good thing in my opinon.

I think minute-old cat shit smells worse than week-old cat shit, but that's just me.

John, I want to do an all-grain brew, but since we got back we've been swamped. Now I have the feeling I will be working on a resume this weekend, I still have the honeymoon webpage to do, and we haven't written our thank you notes yet. So maybe in a couple weeks we could get together and try the all grain.

I still need to bring the Johnny Hanson tape to woodman.

3 days in a row i haven't been able to rack my fucking beer. damn it. i was going to do it when i got done at modified last night, but it was way to late and i was tired. will try again tonight; hopefully it'll get done. man, it looks TASTY.
