all you fancy chef types - any good recipes that call for red cabbage? I can only eat so much of it raw.
kinda similar to ninjaneer's idea
heat olive oil in a saucepan, cook 1/2 lb bacon (diced) and 1 tbs fennel seeds 'til golden. add 1 onion peeled and sliced, cook a little longer (w/ lid on). add 2 granny smith apples(cubed), 1 head red cabbage (decent sized chunks), 3/4 cup of balsamic vinegar and some s & p. stir everything together well, turn down the heat to low and simmer that sucker with the lid on for an hour. make sure to check and stir every so often. once it thickens and gets sticky-sweet it's ready to go. i always add some butter and parsley as garnish when i serve it, but i guess if you're looking to keep it somewhat healthy you wouldn't do that. of course omitting butter would be wrong but...
