I want pizza

I haven't had pizza in a month.

Enchiladas and I am having them tonight.

My recipe.....

Ingredients
1. Get Macayo's enchilada sauce, large can
2. Get real sour cream. Not the lite crap
3. Get Phili cream cheese
4. Get boneless skinless chicken breasts
5. Get corn tortillas
6. Your favorite salsa
7. Large package of shredded Mexican shredded cheese OR shred your own (need Cheddar and Monterrey jack cheese, and any other cheese you like~more the better)
8. Green onions, dice them like chives
9. diced Green chilis (can be canned)
10. diced black olives (can be canned)
11. 2 baking pans: Need a large baking ceramic pan that can hold 10-20 enchiladas, and a large pan to bake the chicken breasts

chicken prep:
1. unpack chicken breasts, wash it with water, then stab it with a fork a lot
2. Get a pan or bowl, pour salsa in it.
3.Place chicken and submerge it in salsa for 2 days
4. place chicken and marinade in baking pan. Bake chicken at 350 degrees (higher if preferred) until chicken's well cooked and tender. Usually 20-30 minutes.
5. Chicken should be done but also so tender that you can shred it by mashing it with a large plastic stirring spoon, in baking pan. Do this to shred chicken.
6. Mix in diced green peppers after shredding chicken.

Enchilada prep

1. get your ceramic pan or pans
2. gather cream cheese, shredded chicken, Mexican shredded cheese, and tortillas
3. Take tortilla, add a pat of phili cream cheese (more the better, but as desired), some shredded chicken, and some shredded cheese, and place in baking pan
4. do this until you fill pan with rolled enchiladas.
5. Cover enchiladas with 1 layer of shredded cheese
6. Cover liberally with a layer of Macayo's enchilada sauce. should take whole can.
7. Cover sauce and enchiladas with second layer of shredded cheese
8. Preheat oven to 350 degrees, place enchiladas in, and let bake for 1/2 hour to 40 minutes, depending on size of pan
9. Once done, add pat of sour cream to top of enchiladas, and sprinkle chopped green onions and diced black olives on top of sour cream
10. Serve and prepare for the awesomeness

canned enchilada sauce - las palmas is my favorite brand. so good. I like to make my own sauce when I have the time.

I dip the corn tortillas in hot veg oil first then dip in some of the heated enchilada sauce before I roll them w/ filling. (my filling is a mix of cheeses, diced fresh jalapeno, green chile, black bean, white corn, roasted mushroom and carmalized onion) - smother in sauce and cheeses. Serve w/ savory spanish rice and fresh salsa.

My dinner last night turned out really tasty. Made enough for left overs tonight.

whole wheat linguini w/ pesto, feta and roasted baby portabellas/garlic/red peppers mixed in.

had some leftover cherry blossom hakata noodle soup today. eating someone's leftover xmas goodies they brought into the break room. one is a white chocolate/frosting thing with peanuts and bits of pretzel in it. so good.
